Vendor Spotlight: Rosa’s Catering
Forty years ago Rosa Nussbaumer started catering small parties. Through word-of-mouth, the business grew, so much so that now Rosa’s Catering is one of the most sought after caterers in the Knoxville area.
“We focus of three things, quality of the food, presentation and service,” said general manager Rada Rolinson, who’s been with Rosa’s catering for 38 years.
According to Rada, the chefs use only the freshest and best ingredients.
“Also, we want it to look as good as it tastes,” Rada said. That’s why they communicate with other reception vendors to ensure the linens, flowers and reception decor all compliment the food presentation.
Rosa’s son, Phillip Nussbaumer, has taken over as owner and CEO of the Rosa’s catering, but Rosa is still an executive chef and in charge of research and development.
“We’re always looking for innovative things,” Rada said. She said they stay on top of trends and continue to introduce new menu items. In fact, Rada said they’ve just come up with new desserts, like French meringue and little raspberry infused chocolate bombs. “We have a good time!” Rada said they really enjoy themselves when they sample new menu options.
Fun seems to be the focal point at wedding receptions. That’s one reason that specialty stations are a big trend. For example, guests love interactive pasta stations, carving stations and fajita stations, Rada said.
In addition to weddings, Rosa’s Catering can cater any corporate event, fundraiser or party at Castleton Farms.
