To Save or Not to Save

 

The custom of saving the top tier of a wedding cake stated in the late 19th century.  I was assumed that a christening would soon follow a wedding ceremony so the top tier was saved to serve at the christening.  When three tier cakes became popular the bottom tier was used for the reception, the middle tier was distributed for guests to take home and the top tier saved.  When couples started to put off having children right away the tradition of saving the top tier continued but the cake was shared by the couple on the first anniversary.

 

Whether you save the top tier or have a copy-cake made for your first anniversary having cake to celebrate is a nice touch.

 

How to store your top tier:

 

  • Remove cake topper and non-edible decorations.
  • If buttercream place in freezer for about an hour so the icing can harden (Fondant cakes do not need to go in the freezer before wrapping).
  • Remove from freezer and wrap with plastic wrap several times.  Wrap tight and try to remove any air.
  • Use heavy duty aluminum foil and wrap several more times.
  • If possible place wrapped cake in an air tight container or air tight bag.  Wrap container or bag in heavy duty aluminum foil.
  • Place in the back of the freezer.

 

Getting ready to enjoy your cake:

 

  • The day before your anniversary remove the cake from the freezer and place in the refrigerator.
  • After a couple of hours remove the aluminum foil and plastic wrap and continue to defrost in the refrigerator.
  • Bring cake to room temperature before serving.
  • Enjoy!
